Active dry yeast is a Yeast product that maintains strong fermentation ability after being pressed, dried and dehydrated from specially cultured fresh yeast. The pressed yeast is squeezed into thin strips or small balls, and the low-humidity circulating air is used to continuously dry through the fluidized bed, so that the final fermentation moisture reaches about 8%, and the fermentation ability of the yeast is maintained.

Is Active Dry Yeast the Same As Instant Dry Yeast?

Currently, there are two types of Yeast on the market: Active Dry Yeast and Instant Dry Yeast. both Yeast produced from same raw material and technology, Only the particle size of Active dry yeast is a little bit larger than Instant dry yeast.

Another, Instant dry yeast can be used immediately without activation. Although both types of yeast can be used interchangeably, the amount used will vary because instant yeast is more concentrated than active dry yeast and usually only a small amount is needed during use to achieve results.

What’s Difference Between Low sugar Yeast and High Sugar Yeast?

  • Low-sugar yeast has very low sugar tolerance and is suitable for making sugar-free or low-sugar staple breads (such as traditional European bread), Chinese steamed buns, etc.;
  • After special cultivation, high-sugar yeast has high sugar tolerance and is suitable for making high-sugar snack bread. The classification of high sugar and low sugar is based on whether the added amount of sugar in the dough exceeds 8% (calculated as flour). If it is higher than 8%, it is a high-sugar environment, so high-sugar yeast should be used. Otherwise, it is low-sugar environment and low-sugar yeast should be used.
