Fresh yeast is a kind of yeast without drying and granulation process.Compared with dry yeast, fresh yeast has many living cells, fast fermentation speed, sufficient fermentation flavor and low cost.
There are two types of fresh yeast: high sugar type and low sugar type.
(1) low-sugar fresh yeast is suitable for flour products with a sugar content of less than 5 jin per 100 kg of flour or without added sugar. Low-sugar fresh yeast is more advantageous for flour products without added sugar.For example: steamed bread, steamed buns, flower roll, less sugar content of the cake.
(2) high-sugar fresh yeast is suitable for flour products with a sugar content of more than 5 catties per 100 catties.High sugar fresh yeast is used in products with high sugar content.Such as: all kinds of bread, sweet steamed bread, high-grade fermentation of dim sum, cakes and so on.
